Buffalo Turkey Meatballs

Ingredients

• 3 tbsp. butter

• 1/4 c. Frank's RedHot sauce

• 1/3 c. crumbled blue cheese

• Sea salt

• 1/4 c. corn flakes bread crumbs (it is what I had on hand)

• 2 stalks celery, finely chopped

• 2 cloves garlic, minced

• 1 large egg

• 1/4 c. onions, finely chopped

• 1/2 tsp. onion powder

• 1 lb. ground chicken/turkey

Directions

1. Preheat oven to 425° and line a baking sheet with parchment paper or a silicone mat. In a small saucepan over medium heat, combine butter, hot sauce, and blue cheese, and season with salt. Whisk until butter and cheese have melted, 2 minutes. Remove from heat and let cool.

2. Meanwhile, in a medium bowl, stir together breadcrumbs, celery, garlic, egg, onions and onion powder. Add chicken and the hot sauce mixture and mix until combined.

3. Using a cookie scoop, form 1-inch meatballs and transfer to prepared baking sheet.

4. Bake until golden, 15 to 17 minutes.
