Creamy Lemon Salmon

Ingredients

  • 16 oz salmon fillet cut into 2 fillets

  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • 2 tablespoons Dijon mustard

  • ½ teaspoon black pepper

  • ¼ teaspoon salt

Sauce

  • ¼ cup butter

  • 2 cloves garlic, minced

  • ½ cup heavy cream

  • 2 tablespoons lemon juice

  • 2 tablespoons fresh parsley, chopped

  • ½ teaspoon salt

  • ½ teaspoon black pepper

Instructions

1.                  Preheat the oven to 440C/220C degrees.

2.                  Pat the salmon fillets dry with paper towels and season both sides with salt and pepper   and place in a baking dish.

3.                  In a medium bowl mix the lemon juice, garlic and Dijon mustard.

4.                  Pour the mixture over the salmon fillets and bake for 10 to 15 minutes until cooked through and flaky. Check after ten minutes to not over cook your salmon.

Make the sauce

1.                  In a medium saucepan melt the butter on a medium heat.

2.                  Add the minced garlic and cook for one minute.

3.                  Add the cream and simmer for 3 to 5 minutes until thickened.

4.                  Stir in the lemon juice, parsley, salt and pepper.

5.                  Remove the fish from the oven and pour the sauce over the fillets.

6.                  Serve with chopped parsley on top.
