Baked Cod with Sweet and Spicy Peppers over Cauliflower Mash

When I grocery shop, most items I buy are fresh for the week. I do like to keep some frozen foods on hand for those days when it is time for a grocery trip. This entire meal was made with frozen wild caught Cod, frozen tri-color bell peppers and frozen cauliflower mash (Alexia brand is my favorite)

Be creative with what you have in the fridge or freezer and you may surprise yourself. This turned out to be one of the best fish dishes I have ever made!

I preheated the oven to 400 degrees and then lined a baking dish with parchment paper.

I sprinkled the fish with sea salt, paprika and dill, front and back and placed in the baking dish.

I mixed 3 TBSP of melted of grass-fed butter, 1 TBSP EVOO and 3 TBSP of fresh minced garlic and spooned over the fish.

I baked the fish for 20 minutes.

While the fish was baking, I heated a TBSP of EVOO in a skillet and added the peppers. They do not take long to cook from frozen. I seasoned with sea salt, red pepper flakes and Stevia (you can use 2 TBSP of sugar if you prefer). I then added 1 TBSP of white vinegar and a dash of white wine I had on hand.

The cauliflower mash were heated in the microwave.

It was truly so flavorful and light. DO NOT be afraid to be creative in your kitchen.
